Ingredients

- 2 cups Graham Cracker Crumbs

- 1 (3.4 ounce) box Pineapple Jell-O
- 1/2 cup Boiling Water
- 1 (20 ounce) can Pineapple Tidbits, undrained
Instructions
- Prepare the Crust:
- In a large mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Press the mixture firmly into the bottom of a 13×9 inch pan. Chill in the refrigerator while you prepare the filling.
- Make the Cheesecake Filling:
- Using a mixer, beat the cream cheese and sugar until light and fluffy, about 2 minutes. Stir in the vanilla extract.
- Gently fold in the whipped topping until well combined.
- Spread this mixture over the chilled crust. Return to the refrigerator to chill further.
- Create the Pineapple Topping:
- In another bowl, dissolve the Pineapple Jell-O in boiling water, stirring for about 2 minutes.
- Add the undrained pineapple tidbits to the Jell-O mixture and stir to combine.
- Gently pour this pineapple mixture over the cheesecake layer. Cover and refrigerate until set, at least 2 hours.
