No-Bake Pineapple Cheesecake Bars

Ingredients

For the Crust

  • 2 cups Graham Cracker Crumbs
  • 1/2 cup Salted Butter, melted
  • 2 tablespoons Granulated Sugar

For the Cheesecake Filling

  • 2 packages Cream Cheese, softened (8 ounces each)
  • 1/2 cup Granulated Sugar
  • 1 teaspoon Pure Vanilla Extract
  • 1 container Whipped Topping (8 ounces)

For the Pineapple Topping

  • 1 box Pineapple Jell-O (3.4 ounces)
  • 1/2 cup Boiling Water
  • 1 can Pineapple Tidbits, undrained (20 ounces)

Instructions

  • In a large mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Press the mixture firmly into the bottom of a 13×9 inch pan. Chill in the refrigerator while you prepare the filling.
  • Using a mixer, beat the cream cheese and sugar until light and fluffy, about 2 minutes. Stir in the vanilla extract.
  • Gently fold in the whipped topping until well combined. Spread this mixture over the chilled crust. Return to the refrigerator to chill further.
  • In another bowl, dissolve the Pineapple Jell-O in boiling water, stirring for about 2 minutes. Add the undrained pineapple tidbits to the Jell-O mixture and stir to combine.
  • Gently pour this pineapple mixture over the cheesecake layer. Cover and refrigerate until set, at least 2 hours.

Notes

Important: Do not use fresh pineapple as it contains enzymes that prevent Jell-O from setting. Tip for Easy Removal: Line your dish with foil or parchment paper, allowing the edges to overlap the sides for easy lifting once set.
