2cupsGraham Cracker Crumbs
1/2cupSalted Butter, melted
2tablespoonsGranulated Sugar
For the Cheesecake Filling
2packagesCream Cheese, softened(8 ounces each)
1/2cupGranulated Sugar
1teaspoonPure Vanilla Extract
1containerWhipped Topping(8 ounces)
For the Pineapple Topping
1boxPineapple Jell-O(3.4 ounces)
1/2cupBoiling Water
1canPineapple Tidbits, undrained(20 ounces)
Instructions
In a large mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Press the mixture firmly into the bottom of a 13×9 inch pan. Chill in the refrigerator while you prepare the filling.
Using a mixer, beat the cream cheese and sugar until light and fluffy, about 2 minutes. Stir in the vanilla extract.
Gently fold in the whipped topping until well combined. Spread this mixture over the chilled crust. Return to the refrigerator to chill further.
In another bowl, dissolve the Pineapple Jell-O in boiling water, stirring for about 2 minutes. Add the undrained pineapple tidbits to the Jell-O mixture and stir to combine.
Gently pour this pineapple mixture over the cheesecake layer. Cover and refrigerate until set, at least 2 hours.
Notes
Important: Do not use fresh pineapple as it contains enzymes that prevent Jell-O from setting. Tip for Easy Removal: Line your dish with foil or parchment paper, allowing the edges to overlap the sides for easy lifting once set.
