Ingredients
For the Fritter Bites:
- Nonstick cooking spray, for greasing
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon kosher salt
- 2 teaspoons cinnamon
- 1/4 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/2 cup no-sugar-added applesauce
- 1 1/2 cups peeled and finely diced Honeycrisp apples (about 2 medium apples)
For the Glaze:
- 2 cups powdered sugar
- 1/3 cup plus 2 tablespoons apple cider or apple juice
Instructions
- Prepare the Oven and Pan:
- Preheat your oven to 400°F (200°C). Spray a baking sheet with nonstick cooking spray to ensure the fritters do not stick.
- Mix Dry Ingredients:
- In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon until well combined. This mixture will form the base of your fritter bites.
- Combine Wet Ingredients:
- In a large bowl, whisk the melted butter and sugar until smooth. Add the egg and vanilla extract, mixing well after each addition. Stir in the applesauce to incorporate.
- Combine Wet and Dry Mixtures:
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Carefully fold in the diced apples, ensuring they are evenly distributed throughout the batter.
- Bake the Fritter Bites:
- Scoop 1 tablespoon of the batter for each fritter onto the prepared baking sheet, spacing them a few inches apart. Bake for 10 minutes, or until the fritters are set and lightly golden.
- Prepare the Glaze:
- While the fritters are baking, whisk together the powdered sugar and apple cider in a small bowl until the glaze is smooth and thin.
- Glaze and Broil:
- After baking, brush the fritters with some of the glaze. Then, turn on the broiler and broil the glazed fritters for 2-4 minutes, keeping a close eye on them and rotating the baking sheet as needed for even caramelization.
- Final Glaze Application:
- Brush the remaining glaze over the broiled fritters and allow them to set on the baking sheet for about 15 minutes until the glaze hardens.
Serve these Apple Fritter Bites warm or at room temperature for a delightful snack or dessert. Their crispy edges, soft centers, and sweet glaze make them a favorite at any gathering or a cozy night in.
