Ingredients

For the Fritter Bites

  • 1 can Nonstick cooking spray for greasing
  • 1.5 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Kosher salt
  • 2 teaspoons Cinnamon
  • 0.25 cup Unsalted butter melted
  • 0.25 cup Granulated sugar
  • 1 large Egg
  • 0.5 teaspoon Vanilla extract
  • 0.5 cup No-sugar-added applesauce
  • 1.5 cups Honeycrisp apples peeled and finely diced (about 2 medium apples)

For the Glaze

  • 2 cups Powdered sugar
  • 0.33 cup Apple cider plus 2 tablespoons

Instructions

  • Preheat your oven to 400°F (200°C). Spray a baking sheet with nonstick cooking spray to ensure the fritters do not stick.
  • In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon until well combined.
  • In a large bowl, whisk the melted butter and sugar until smooth. Add the egg and vanilla extract, mixing well after each addition. Stir in the applesauce to incorporate.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Carefully fold in the diced apples.
  • Scoop 1 tablespoon of the batter for each fritter onto the prepared baking sheet, spacing them a few inches apart. Bake for 10 minutes, or until the fritters are set and lightly golden.
  • While the fritters are baking, whisk together the powdered sugar and apple cider in a small bowl until the glaze is smooth and thin.
  • After baking, brush the fritters with some of the glaze. Then, turn on the broiler and broil the glazed fritters for 2-4 minutes, keeping a close eye on them.
  • Brush the remaining glaze over the broiled fritters and allow them to set on the baking sheet for about 15 minutes until the glaze hardens.

Notes
