0.5cupNo-sugar-added applesauce
1.5cupsHoneycrisp applespeeled and finely diced (about 2 medium apples)
For the Glaze
2cupsPowdered sugar
0.33cupApple ciderplus 2 tablespoons
Instructions
Preheat your oven to 400°F (200°C). Spray a baking sheet with nonstick cooking spray to ensure the fritters do not stick.
In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon until well combined.
In a large bowl, whisk the melted butter and sugar until smooth. Add the egg and vanilla extract, mixing well after each addition. Stir in the applesauce to incorporate.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Carefully fold in the diced apples.
Scoop 1 tablespoon of the batter for each fritter onto the prepared baking sheet, spacing them a few inches apart. Bake for 10 minutes, or until the fritters are set and lightly golden.
While the fritters are baking, whisk together the powdered sugar and apple cider in a small bowl until the glaze is smooth and thin.
After baking, brush the fritters with some of the glaze. Then, turn on the broiler and broil the glazed fritters for 2-4 minutes, keeping a close eye on them.
Brush the remaining glaze over the broiled fritters and allow them to set on the baking sheet for about 15 minutes until the glaze hardens.
