  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1/2 cup sour cream

Step-by-Step Instructions

  1. Preheat your oven to 350°F (175°C). Place cupcake wrappers in a muffin tin to hold your Taco Cupcakes.
  2. Brown the ground beef: In a skillet over medium heat, add the ground beef and cook until browned. Drain the excess fat.
  3. Season the beef: Stir in the taco seasoning with 2/3 cup of water. Let it simmer for about 5 minutes, or until the liquid is almost completely absorbed.
  4. Fill the wrappers: Spoon the seasoned beef mixture into the cupcake wrappers, filling them about halfway.
  5. Top with cheese: Sprinkle a generous amount of shredded cheddar cheese over the beef in each wrapper.
  6. Bake them up: Place the muffin tin in the preheated oven and bake for 10-15 minutes until the cheese is bubbly and golden.

What to Serve Taco Cupcakes With:

Complement your Taco Cupcakes with some delicious sides! Here are a few ideas:

  • Guacamole and Tortilla Chips: A classic appetizer that goes hand in hand with any taco-themed meal.
  • Mexican Street Corn: The sweet and spicy flavors of elote will enhance your festive dinner.
  • Crisp Green Salad: A light salad with a citrus vinaigrette balances the richness of the cupcakes perfectly.
  • Chilled Margaritas or Limeade: Refreshing drinks that pair magnificently with the spice of the tacos.

Top Tips for Perfecting Taco Cupcakes:

  • Ingredient Substitutions: Use ground turkey or beef if you’re looking for a healthier option.
  • Timing Adjustments: Keep an eye on baking time since ovens may vary; you want the cheese melted but not burnt.
  • Avoiding Common Mistakes: Don’t overfill the wrappers; otherwise, you might end up with messy cupcakes!

Storing and Reheating Tips:

To keep your Taco Cupcakes fresh:

  1. Refrigeration: Store any leftovers in an airtight container in the refrigerator for up to 3 days.
  2. Freezing: You can freeze the unbaked cupcakes for up to 3 months. Just assemble everything but the cheese and toppings, and freeze the meat mixture separately. When you’re ready to bake, simply defrost, add cheese, and follow baking instructions.
  3. Reheating: When ready to eat the leftovers, pop them in the oven at 350°F (175°C) for about 10 minutes or until heated through.

There is nothing in the recipe to hold this all together. From the pic I thought is was probably going to be some kind of cornmeal batter in the bottom but no. The recipe does not go with the photo of the finished product.
