Ingredients

  • 1 1/2 lbs baby potatoes, halved
  • 3 tablespoons olive oil (for coating the baking pan)
  • 1/2 cup italian or panko breadcrumbs
  • 1 cup grated Parmesan (not shredded)
  • 1 tsp parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika or cajun seasoning
  • 1/2 cup melted butter
  • 1 tsp pepper
  • 1 tsp salt
  • 3 large garlic cloves, finely minced
  • chopped scallions or chives
