This Southern Chocolate Cobbler is a warm, gooey, and incredibly decadent dessert that combines the richness of a brownie with the warmth of a pudding. It’s a self-saucing chocolate treat, perfect when paired with vanilla ice cream.
Ingredients:
For the Batter:
- 1/2 cup unsalted butter
- 1 1/2 cups granulated sugar
- 4 tablespoons unsweetened cocoa powder
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 2 teaspoons vanilla extract
For the Topping:
- 2 cups granulated sugar
- 1/2 cup unsweetened cocoa powder
- 3 cups boiling water
- Vanilla ice cream, for serving (optional, but highly recommended)
Instructions:
1. Preheat the Oven:
- Preheat your oven to 350°F (175°C).
2. Melt the Butter:
- Place 1/2 cup of unsalted butter in a 9×13-inch baking dish. Put the dish in the preheated oven to melt the butter.
- Once melted, remove the dish from the oven and set aside.
3. Prepare the Batter:
- In a medium bowl, stir together the 1 1/2 cups sugar, 4 tablespoons unsweetened cocoa powder, 2 cups all-purpose flour, 2 teaspoons baking powder, 1/4 teaspoon salt, 1 cup milk, and 2 teaspoons vanilla extract until smooth.
- Spoon the batter into the baking dish over the melted butter. Do not stir the butter into the batter; leave it as is.
4. Prepare the Topping:
- In a separate bowl, mix together the 2 cups sugar and 1/2 cup unsweetened cocoa powder.
- Sprinkle this mixture evenly over the batter in the baking dish.
5. Add Boiling Water:
- Carefully pour 3 cups of boiling water over the top of the cocoa-sugar mixture. Do not stir.
6. Bake:
- Place the dish in the oven and bake for 35-40 minutes, or until the top has set. The bottom will remain loose and gooey, creating a rich chocolate sauce underneath the cobbler crust.
7. Let Cool and Serve:
- Allow the cobbler to cool for about 15 minutes before serving.
- Serve warm, and for an extra indulgent treat, top each serving with a scoop of vanilla ice cream.
Tips:
- Do not stir the layers: The magic of this recipe comes from the layering and the self-saucing process, so resist the urge to stir.
- Add-ins: For extra texture, you can mix in chopped nuts, such as pecans or walnuts, to the batter.
This Southern Chocolate Cobbler is a chocolate lover’s dream, offering a perfect balance of cake-like texture on top with a rich, fudgy sauce on the bottom. Perfect for family gatherings or a cozy night in!
