Equipment

  • Mixing Bowl
  • 9x13 inch Baking Dish

Ingredients

For the Batter

  • 1/2 cup Unsalted Butter
  • 1.5 cups Granulated Sugar
  • 4 tablespoons Unsweetened Cocoa Powder
  • 2 cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 1/4 teaspoon Salt
  • 1 cup Milk
  • 2 teaspoons Vanilla Extract

For the Topping

  • 2 cups Granulated Sugar
  • 1/2 cup Unsweetened Cocoa Powder
  • 3 cups Boiling Water
  • Vanilla Ice Cream for serving (optional, but highly recommended)

Instructions

  • 1. Preheat your oven to 350°F (175°C).
  • 2. Place 1/2 cup of unsalted butter in a 9×13-inch baking dish. Put the dish in the preheated oven to melt the butter. Once melted, remove the dish from the oven and set aside.
  • 3. In a medium bowl, stir together the 1 1/2 cups sugar, 4 tablespoons unsweetened cocoa powder, 2 cups all-purpose flour, 2 teaspoons baking powder, 1/4 teaspoon salt, 1 cup milk, and 2 teaspoons vanilla extract until smooth. Spoon the batter into the baking dish over the melted butter. Do not stir the butter into the batter; leave it as is.
  • 4. In a separate bowl, mix together the 2 cups sugar and 1/2 cup unsweetened cocoa powder. Sprinkle this mixture evenly over the batter in the baking dish.
  • 5. Carefully pour 3 cups of boiling water over the top of the cocoa-sugar mixture. Do not stir.
  • 6. Place the dish in the oven and bake for 35-40 minutes, or until the top has set. The bottom will remain loose and gooey, creating a rich chocolate sauce underneath the cobbler crust.
  • 7. Allow the cobbler to cool for about 15 minutes before serving. Serve warm, and for an extra indulgent treat, top each serving with a scoop of vanilla ice cream.

Notes

Do not stir the layers: The magic of this recipe comes from the layering and the self-saucing process, so resist the urge to stir. For extra texture, you can mix in chopped nuts, such as pecans or walnuts, to the batter.
