Instructions
1. Preheat your oven to 350°F (175°C).
2. Place 1/2 cup of unsalted butter in a 9×13-inch baking dish. Put the dish in the preheated oven to melt the butter. Once melted, remove the dish from the oven and set aside.
3. In a medium bowl, stir together the 1 1/2 cups sugar, 4 tablespoons unsweetened cocoa powder, 2 cups all-purpose flour, 2 teaspoons baking powder, 1/4 teaspoon salt, 1 cup milk, and 2 teaspoons vanilla extract until smooth. Spoon the batter into the baking dish over the melted butter. Do not stir the butter into the batter; leave it as is.
4. In a separate bowl, mix together the 2 cups sugar and 1/2 cup unsweetened cocoa powder. Sprinkle this mixture evenly over the batter in the baking dish.
5. Carefully pour 3 cups of boiling water over the top of the cocoa-sugar mixture. Do not stir.
6. Place the dish in the oven and bake for 35-40 minutes, or until the top has set. The bottom will remain loose and gooey, creating a rich chocolate sauce underneath the cobbler crust.
7. Allow the cobbler to cool for about 15 minutes before serving. Serve warm, and for an extra indulgent treat, top each serving with a scoop of vanilla ice cream.
