Ingredients

  • 2 cups granulated sugar
  • 3/4 cup butter or margarine, softened
  • 4 large eggs, separated

  • 1 cup hot mashed potatoes
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cloves
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup walnut pieces

Directions

  1. Preheat Oven and Prepare Pan:
    • Begin by preheating your oven to 350°F (175°C). Grease a 9×13 inch baking pan and set aside.
  2. Cream Butter and Sugar:
    • In a large bowl, cream together the butter and sugar until light and fluffy. This creates the base of your cake’s texture.
  3. Add Wet Ingredients:
    • Mix in the egg yolks and milk to the butter mixture, beating until fully incorporated.
  4. Incorporate Mashed Potatoes and Cocoa:
    • Stir in the cocoa powder and hot mashed potatoes, blending well. The mashed potatoes add moisture and a unique texture to the cake.
  5. Mix Dry Ingredients:
    • In another bowl, whisk together the flour, baking powder, cloves, nutmeg, cinnamon, and salt. Gradually add these to the wet mixture, beating until just combined.
  6. Add Nuts and Egg Whites:
    • Fold in the walnut pieces.
    • In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the batter, being careful not to deflate the mixture.
  7. Bake:
    • Pour the batter into the prepared baking pan and smooth the top.
    • Bake for about 35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool and Serve:
    • Allow the cake to cool in the pan before cutting into squares.
