  • Cream Butter and Sugar: In a large bowl, cream together the butter and sugar until light and fluffy.
  • Add Wet Ingredients: Mix in the egg yolks and milk to the butter mixture, beating until fully incorporated.
  • Incorporate Mashed Potatoes and Cocoa: Stir in the cocoa powder and hot mashed potatoes, blending well.
  • Mix Dry Ingredients: In another bowl, whisk together the flour, baking powder, cloves, nutmeg, cinnamon, and salt. Gradually add these to the wet mixture, beating until just combined.
  • Add Nuts and Egg Whites: Fold in the walnut pieces. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the batter.
  • Bake: Pour the batter into the prepared baking pan and smooth the top. Bake for about 35 minutes, or until a toothpick inserted into the center comes out clean.
