Easy Banana Nut Bread

This Banana Nut Bread is a delicious, moist, and easy-to-make treat perfect for breakfast or a snack. The recipe makes two loaves, so you’ll have one to share or freeze for later!

Ingredients:

  • 2 cups all-purpose flour
  • 1½ tsp baking soda
  • Pinch of salt
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • ½ tsp cinnamon (optional)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 4 medium ripe bananas, mashed (about 1⅓ cups)
  • 1 cup coarsely chopped walnuts

Directions:

  1. Preheat and Prep:
    • Preheat your oven to 350°F (175°C).
    • Grease two 8×4-inch loaf pans and set aside.
  2. Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking soda, and salt. Set this aside.
  3. Wet Ingredients:
    • In a large mixing bowl, whisk together the sugar, oil, eggs, cinnamon (if using), and vanilla extract until well combined.
    • Add the mashed bananas and stir gently to mix.
  4. Combine and Fold:
    • Gradually add the dry flour mixture into the wet banana mixture, stirring until completely combined.
    • Using a rubber spatula, fold in the chopped walnuts.
  5. Bake:
    • Divide the batter evenly between the two greased loaf pans.
    • Bake for 35 to 45 minutes, or until a thin knife inserted into the center comes out clean. (Tip: If the loaves start to brown too quickly before baking through, cover them loosely with foil.)
  6. Cool:
    • Let the loaves cool in the pans for 10 minutes before turning them out onto a wire rack to cool completely.
