Instructions
Preheat oven to 350°F (175°C). Grease two 8×4-inch loaf pans.
In a medium bowl, whisk together flour, baking soda, and salt.
In a large bowl, whisk sugar, oil, eggs, cinnamon (if using), and vanilla until smooth.
Stir in mashed bananas until just combined.
Gradually mix in dry ingredients until fully incorporated.
Fold in chopped walnuts using a rubber spatula.
Divide batter between pans and bake for 35 to 45 minutes, until a knife comes out clean.
Cool in pans for 10 minutes, then transfer to a wire rack.
Notes
Store banana bread in an airtight container for up to 3 days. Freeze for up to 3 months. Customize with chocolate chips, pecans, or cinnamon swirl.
