Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 1.5 teaspoons baking soda
  • 1 pinch salt

Wet Ingredients

  • 1 cup granulated sugar
  • 0.5 cup vegetable oil
  • 0.5 teaspoon cinnamon (optional)
  • 2 large eggs
  • 1 teaspoon vanilla extract

Banana and Nuts

  • 4 medium ripe bananas, mashed (about 1⅓ cups)
  • 1 cup coarsely chopped walnuts

Instructions

  • Preheat oven to 350°F (175°C). Grease two 8×4-inch loaf pans.
  • In a medium bowl, whisk together flour, baking soda, and salt.
  • In a large bowl, whisk sugar, oil, eggs, cinnamon (if using), and vanilla until smooth.
  • Stir in mashed bananas until just combined.
  • Gradually mix in dry ingredients until fully incorporated.
  • Fold in chopped walnuts using a rubber spatula.
  • Divide batter between pans and bake for 35 to 45 minutes, until a knife comes out clean.
  • Cool in pans for 10 minutes, then transfer to a wire rack.

Notes

Store banana bread in an airtight container for up to 3 days. Freeze for up to 3 months. Customize with chocolate chips, pecans, or cinnamon swirl.
