Crispy Fried Mushrooms with Cool Ranch Dip

Ingredients:

For the Mushrooms:

  • 1 lb button mushrooms, cleaned and sliced
  • 1 cup all-purpose flour
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 2 large eggs, beaten
  • 1 cup breadcrumbs or panko (for extra crunch)
  • Vegetable oil, for frying

For the Ranch Dip:

  • ½ cup mayonnaise
  • ½ cup sour cream
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 garlic clove, minced
  • 1 teaspoon lemon juice
  • Salt and pepper, to taste

Instructions:

1. Prepare the Ranch Dip:

  • In a small mixing bowl, combine ½ cup mayonnaise, ½ cup sour cream, 1 tablespoon fresh dill, 1 tablespoon fresh chives, and 1 minced garlic clove.
  • Add 1 teaspoon lemon juice, and season with salt and pepper to taste.
  • Mix until smooth and refrigerate until ready to serve. The longer it sits, the better the flavors meld.

2. Prepare the Mushrooms:

  • In a shallow dish, mix 1 cup flour, 2 teaspoons garlic powder, 1 teaspoon paprika, salt, and pepper.
  • In a second dish, place the beaten eggs.
  • In a third dish, place the breadcrumbs or panko.

3. Fry the Mushrooms:

  • Heat about 1 inch of vegetable oil in a skillet over medium-high heat.
  • Dredge each mushroom slice in the seasoned flour, shaking off any excess. Then dip the mushroom in the beaten eggs, followed by the breadcrumbs or panko, ensuring they’re fully coated.
  • Carefully place the mushrooms in the hot oil and fry in batches until they turn golden brown and crispy, about 2-3 minutes per side.
  • Remove and drain on paper towels.

4. Serve:

  • Serve the hot, crispy fried mushrooms immediately with the cool ranch dip on the side.

Tips:

  • For extra crunch, use panko breadcrumbs instead of regular breadcrumbs.
  • Ensure the oil is hot before frying by testing a small breadcrumb in the oil. If it sizzles, the oil is ready.
  • You can substitute button mushrooms with cremini or baby bella mushrooms for a richer flavor.
