For the Mushrooms
1lbbutton mushrooms, cleaned and sliced
1cupall-purpose flour
2teaspoonsgarlic powder
1teaspoonpaprika
Salt and pepper, to taste
2largeeggs, beaten
1cupbreadcrumbs or pankofor extra crunch
Vegetable oil, for frying
For the Ranch Dip
½cupmayonnaise
½cupsour cream
1tablespoonfresh dill, chopped
1tablespoonfresh chives, chopped
1clovegarlic, minced
1teaspoonlemon juice
Salt and pepper, to taste
Instructions
1. In a small mixing bowl, combine mayonnaise, sour cream, fresh dill, chives, minced garlic, and lemon juice. Season with salt and pepper. Mix until smooth and refrigerate.
2. In a shallow dish, mix flour, garlic powder, paprika, salt, and pepper. Place beaten eggs in another dish and breadcrumbs in a third.
3. Heat about 1 inch of vegetable oil in a skillet over medium-high heat.
4. Dredge each mushroom slice in flour mixture, dip in eggs, then coat with breadcrumbs.
5. Fry mushrooms in batches until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels.
6. Serve immediately with cool ranch dip.
Notes
For extra crunch, use panko breadcrumbs. Avoid microwaving leftovers, as they may turn soggy.
