Brown Butter Bourbon Pecan Chocolate Chunk Cookies

INGREDIENTS

For the Buttered Pecans:
  • 1 and 1/2 c pecan halves, finely chopped
  • 1 and 1/2 tbsp unsalted butter
For the Brown Butter Bourbon Pecan Chocolate Chunk Cookies:
  • 2 sticks (8 oz) unsalted butter, melted until browned
  • 2 and 1/3 c all-purpose flour (don’t pack the flour into the measuring cup!)
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp baking soda
  • 1 c dark brown sugar, packed
  • 1/2 c granulated sugar
  • 2 tsp vanilla extract
  • 2 tbsp bourbon
  • 2 large eggs, at room temperature
  • 12 oz semi-sweet OR dark chocolate, roughly chopped into chunks
  • 24 pecan halves, for decoration, optional

 

INSTRUCTIONS

To Make the Buttered Pecans:

Step 1: Place a large skillet on the stove and turn the heat to medium.

Step 2: Add in the butter and allow it to melt.

Step 3: Add in the chopped pecans and cook for 5 minutes while stirring from time to time until lightly toasted.

To Make the Brown Butter:

Step 1: Place a small saucepan on the stove and turn the heat to medium-high.

Step 2: Add in the butter and stir until brown for about 3 minutes.

Step 3: Transfer the brown butter into a heatproof bowl.

Step 4: Place the bowl inside the fridge for 2 hours to cool.

To Make the Brown Butter Bourbon Pecan Chocolate Chunk Cookies:

Step 1: Prepare the oven and preheat to 190 degrees C or 375 degrees F.

Step 2: Line with parchment paper two large baking sheets.

Step 3: In a large mixing bowl, add in the flour, baking soda, cinnamon, and salt. Whisk until well combined.

Step 4: In another large mixing bowl, add in the sugars and butter. Use a handheld electric mixer to mix until well combined.

Step 5: Add in the bourbon and vanilla. Beat until well mixed.

Step 6: Add in the eggs gradually and beat every addition.

Step 7: Add in the flour and stir until well mixed.

Step 8: Add in the chocolate chunks and buttered pecans. Stir until well combined.

Step 9: Use your palm to roll 3 tablespoons of dough until it turns into a ball.

Step 10: Place the balls on the prepared baking sheets and make sure to leave a space between each ball.

Step 11: Top each ball with pecan and press it gently.

Step 12: Bake inside the preheated oven for 10 minutes or until the sides are golden.

Step 13: Remove from the oven and sprinkle salt right away.

Step 14: Allow the cookies to cool at room temperature for at least 10 minutes.

Step 15: Serve and enjoy!
