Ingredients

Beef

  • 1 lb Flank steak or sirloin, sliced into thin strips Choose a tender cut for best results.

Onions

  • 2 large Onions, thinly sliced

Garlic

  • 3 cloves Garlic, minced

Olive Oil

  • 2 tablespoons Olive oil For cooking.

Thyme

  • 2 sprigs Fresh thyme Can substitute with dried thyme.

Salt and Pepper

  • Salt and pepper to taste

Instructions

  • Begin by slicing your beef into thin strips against the grain for maximum tenderness. Peel and thinly slice the onions, and mince the garlic.
  • Heat one tablespoon of olive oil in a large skillet over medium heat. Add the sliced onions along with a pinch of salt. Cook, stirring occasionally, for about 10-15 minutes, or until the onions are soft and golden brown. If they start to stick, add a splash of water to deglaze the pan.
  • Add the minced garlic to the caramelized onions and cook for another minute, stirring gently so the garlic becomes fragrant but doesn’t burn.
  • Push the onions to the edge of the skillet or remove them temporarily and add the remaining tablespoon of olive oil. Turn the heat up to medium-high and add the beef strips in a single layer. Season generously with salt and pepper. Sear the beef for about 2-3 minutes on each side, until browned and just cooked through.
  • Return the onions (if removed) to the skillet with the beef. Toss everything together, add the thyme sprigs, and cook for an additional minute so all the flavors come together. Taste and adjust seasoning as needed. Remove thyme before serving.
  • Transfer to a serving platter or individual plates. Serve hot, with your favorite sides.

Notes

This dish pairs beautifully with mashed potatoes, rice, or a crisp salad. Enjoy with a glass of red wine or sparkling lemonade.
