Instructions
In a large pot over medium-high heat, cook the ground beef until browned. Drain and set aside.
Add 2 tablespoons of butter to the pot and sauté the chopped onion until tender. Remove and set aside.
Add the remaining 2 tablespoons of butter to the pot and cook the cabbage until tender and slightly wilted.
Return the ground beef and onions to the pot. Add crushed tomatoes, beef broth, chopped tomatoes, and Italian seasoning. Stir to combine.
Let the soup simmer for 15-20 minutes.
Just before serving, stir in the cooked rice. Adjust seasoning with salt and pepper.
Ladle the soup into bowls and enjoy!
Notes
For extra flavor, caramelize the cabbage while sautéing. You can substitute ground turkey or chicken for a lighter version.
