Instructions
1. Cook noodles: Prepare the wide rice noodles (or fettuccine) according to package instructions until al dente. Drain and set aside, tossing with a small drizzle of oil to prevent sticking if desired.
2. Heat oil: In a large skillet over medium heat, add 1 tablespoon vegetable oil and let it warm for 30 seconds.
3. Sauté aromatics: Add minced garlic and grated ginger to the skillet. Cook, stirring constantly, for about 1 minute until fragrant but not browned.
4. Brown the beef: Add 1 lb ground beef to the skillet. Break it up with a spatula and cook until no longer pink, about 5–7 minutes. Drain excess fat if desired.
5. Make the sauce: Stir in soy sauce, hoisin sauce, chili garlic sauce, rice vinegar, sesame oil, and brown sugar. Mix well to combine.
6. Simmer: Reduce heat to low and let the sauce simmer with the beef for about 5 minutes until slightly thickened and flavors meld. Taste and adjust salt, sweetness, or heat as needed.
7. Combine with noodles: Add the cooked noodles to the skillet. Toss gently but thoroughly to coat the noodles in the sauce and heat through, about 1–2 minutes.
