Ingredients

Ground Beef

  • 1 pound Ground beef browned and drained

Potatoes

  • 3 medium Potatoes diced

Carrots

  • 2 large Carrots sliced

Onions

  • 1 large Onion chopped

Canned Tomatoes

  • 1 can (14.5 ounces) Canned tomatoes crushed

Broth

  • 4 cups Beef broth

Seasonings

  • Salt and pepper to taste
  • 1 clove Garlic minced (optional)
  • 1 tsp Dried herbs such as thyme or rosemary (optional)

Instructions

  • In a large pot, cook the ground beef over medium heat until browned. Drain excess fat.
  • Add the chopped onions and carrots to the pot. Cook until slightly softened.
  • Include the potatoes, canned tomatoes, and beef broth. Season with salt, pepper, and optional herbs.
  • Bring to a boil, then reduce heat and simmer for about 30 minutes or until the potatoes and carrots are tender.
  • Adjust seasonings and serve hot, with bread if desired.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat gently on the stove or in the microwave until hot.
