  • 1 tablespoon Olive oil
  • 1 pound Italian sausage Casing removed
  • 1 medium Onion Chopped
  • 2 cloves Garlic Minced
  • 1 can (14.5 oz) Diced tomatoes
  • 2 cups Chicken broth
  • 1/2 cup Heavy cream
  • 12 ounces Pasta Such as penne or rotini
  • 1 cup Shredded mozzarella cheese
  • Salt To taste
  • Pepper To taste
  • Fresh basil Chopped for garnish

Instructions

  • In a large pot, heat the olive oil over medium heat.
  • Add the Italian sausage, breaking it into small pieces, and cook until browned.
  • Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  • Stir in the diced tomatoes and chicken broth, and bring to a boil.
  • Add the pasta to the pot, making sure it is submerged in the liquid.
  • Reduce the heat, cover the pot, and let it simmer for about 10-12 minutes until the pasta is cooked.
  • Stir in the heavy cream and shredded mozzarella cheese until everything is melted and creamy.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh basil.

Notes

For extra flavor, try adding some red pepper flakes for a little spice. You can also swap out the Italian sausage for chicken sausage or a plant-based sausage.
