No Bake Avalanche Cookies

These chewy, crunchy confections are made with peanut butter, Rice Krispies, mini marshmallows, and chocolate chips all wrapped up in a velvety vanilla candy coating.

  • 1/2 cup mini chocolate chips Freeze before adding to the mixture.
  • 16 ounces vanilla flavored candy coating (Almond Bark or CandiQuik)
  • 1 jar creamy peanut butter 15 ounces
  • 2 cups Rice Krispies cereal
  • 1 1/2 cups mini marshmallows

Instructions

  • Line two baking sheets with parchment paper or silicone baking mats. Place mini chocolate chips in the freezer.
  • In a microwave-safe bowl, melt vanilla candy coating in 30-second intervals at 50% power, stirring each time until smooth.
  • In a large bowl, combine Rice Krispies with the melted candy coating and creamy peanut butter. Stir well until coated.
  • Let the mixture cool to room temperature, about 5–10 minutes.
  • Gently fold in mini marshmallows and frozen chocolate chips.
  • Drop mixture by rounded tablespoons onto prepared baking sheets.
  • Let set at room temperature or chill until firm. Store in an airtight container.

Notes

Freeze chocolate chips before adding to prevent melting. Allow mixture to cool before folding in mix-ins. Try swapping peanut butter for cookie butter or adding chopped nuts or sprinkles!
