Instructions
Preheat your oven to 400°F (200°C).
Arrange the chicken breasts in a large baking dish.
Surround the chicken with sliced zucchini, halved cherry tomatoes, sliced red bell pepper, and red onion, spreading the veggies evenly around the chicken.
In a small bowl, whisk together olive oil, minced garlic, dried oregano, dried thyme, salt, and pepper.
Drizzle the olive oil mixture over the chicken and vegetables, making sure everything gets coated evenly.
Bake in the preheated oven for 25-30 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F/74°C) and the vegetables are tender.
