Mediterranean Chicken Zucchini Bake

Ingredients

Chicken and Vegetables

  • 4 pieces Chicken breasts
  • 2 medium Zucchini, sliced (about 2 cups)
  • 1 pint Cherry tomatoes, halved (about 2 cups)
  • 1 cup Red bell pepper, sliced
  • 1/2 cup Red onion, sliced
  • 1/4 cup Olive oil
  • 1/4 cup Fresh parsley, chopped
  • 1/4 cup Fresh basil, chopped
  • 2 cloves Garlic, minced
  • 1/2 teaspoon Dried oregano
  • 1/2 teaspoon Dried thyme
  • Salt and pepper to taste
  • 1/2 cup Feta cheese, crumbled

Instructions

  • Preheat your oven to 400°F (200°C).
  • Arrange the chicken breasts in a large baking dish.
  • Surround the chicken with sliced zucchini, halved cherry tomatoes, sliced red bell pepper, and red onion, spreading the veggies evenly around the chicken.
  • In a small bowl, whisk together olive oil, minced garlic, dried oregano, dried thyme, salt, and pepper.
  • Drizzle the olive oil mixture over the chicken and vegetables, making sure everything gets coated evenly.
  • Bake in the preheated oven for 25-30 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F/74°C) and the vegetables are tender.
  • Remove the dish from the oven. Sprinkle with chopped parsley and basil, then top everything with crumbled feta cheese.
  • Let it cool for a few minutes, then serve warm. Enjoy the colors and aromas of the Mediterranean in every bite!

Notes

For extra color and nutrition, add sliced yellow squash or mushrooms with the vegetables. You can also use goat cheese or grated parmesan instead of feta.
