Ingredients

Pancake Mix Ingredients

  • 4 cups all-purpose flour
  • 3 tablespoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 tablespoons sugar optional, for a slightly sweeter pancake

  • 1 teaspoon cinnamon or nutmeg for a warm, spiced flavor
  • 1/4 cup powdered milk for extra richness

Pancake Preparation Ingredients

  • 1 cup pancake mix
  • 1 piece egg
  • 3/4 cup milk or buttermilk for a richer flavor
  • 2 tablespoons melted butter or oil
  • 1 teaspoon vanilla extract optional

Instructions

  • In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar (if using). Add any optional ingredients if desired.
  • Transfer the pancake mix to an airtight container or mason jar. Label it with the date and store in a cool, dry place for up to 6 months.
  • To make pancakes: In a medium bowl, whisk together 1 cup pancake mix, 1 egg, 3/4 cup milk (or buttermilk), 2 tablespoons melted butter or oil, and 1 teaspoon vanilla extract (optional).
  • Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  • Pour 1/4 cup of batter per pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown.
  • Serve warm with maple syrup, fresh fruit, or whipped cream.

Notes

For variety, try adding blueberries, chocolate chips, or nuts to the batter before cooking.
