  • 1 piece Grilled chicken breast, chopped
  • 1/2 cup Cherry tomatoes, halved
  • 1/2 cup Chopped cucumber
  • 1/4 cup Red onion, diced
  • 1/2 cup Bell peppers, grilled or raw
  • 2 tbsp Feta cheese, crumbled
  • 1 tbsp Fresh parsley, chopped
  • Salt & black pepper to taste

Tzatziki Sauce

  • 1/2 cup Plain Greek yogurt
  • 1/4 cup Cucumber, grated
  • 1 clove Garlic, minced
  • 1 tbsp Olive oil
  • 1 tsp Lemon juice
  • 1 tsp Fresh dill or mint
  • Salt to taste

Instructions

  • Season chicken breast with salt, pepper, and olive oil. Grill over medium heat for 6–8 minutes per side until internal temperature reaches 165°F. Chop into bite-sized pieces.
  • Prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, dill or mint, and salt in a bowl. Stir until well blended.
  • Chop cherry tomatoes, cucumber, red onion, and bell peppers into bite-sized pieces.
  • Assemble bowls: layer the chopped veggies, add grilled chicken, top with tzatziki, then sprinkle feta and parsley on top.
  • Serve immediately and enjoy the fresh, zesty flavors!

Notes

For best flavor, marinate chicken for 30 minutes before grilling. Tzatziki can be made a day ahead. Leftovers last up to 3 days refrigerated (keep sauce separate). Substitute chicken with shrimp or tofu if desired.
