Tzatziki Sauce
1/2cupPlain Greek yogurt
1/4cupCucumber, grated

Instructions
Season chicken breast with salt, pepper, and olive oil. Grill over medium heat for 6–8 minutes per side until internal temperature reaches 165°F. Chop into bite-sized pieces.
Prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, dill or mint, and salt in a bowl. Stir until well blended.
Chop cherry tomatoes, cucumber, red onion, and bell peppers into bite-sized pieces.
Assemble bowls: layer the chopped veggies, add grilled chicken, top with tzatziki, then sprinkle feta and parsley on top.

Notes
For best flavor, marinate chicken for 30 minutes before grilling. Tzatziki can be made a day ahead. Leftovers last up to 3 days refrigerated (keep sauce separate). Substitute chicken with shrimp or tofu if desired.
