Instructions
Preheat oven to 400°F and line two baking sheets with parchment paper.
In a skillet, brown ground beef and diced onions over medium-high heat (about 8 minutes). Drain excess grease.
Stir in taco seasoning and 3/4 cup water. Simmer until liquid evaporates, about 5 minutes.
Spread tortilla chips over both baking sheets.
Spoon refried beans over chips (they’ll soften as they bake).
Add cooked beef evenly over both trays, then top with shredded cheese.
Bake for 15 minutes, or until cheese is melted and bubbly.
Top with diced tomatoes and sliced green onions. Serve immediately.
