Instructions

  • In a skillet, cook ground beef over medium heat until browned. Add diced onions and cook until translucent. Drain excess fat.
  • Lightly grease the crockpot. Layer half of the sliced potatoes at the bottom.
  • Spread half of the beef mixture, black beans, and corn over the potatoes.
  • Repeat with the remaining potatoes, beef, beans, and corn.
  • Pour the diced tomatoes with green chilies and sprinkle taco seasoning evenly over the layers.
  • Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until potatoes are tender.
  • In the last 30 minutes, sprinkle shredded cheddar cheese on top and allow it to melt.
  • Garnish with fresh cilantro and serve with sour cream.

Notes

For extra spice, add diced jalapeños or use spicy taco seasoning. You can also substitute ground beef with ground turkey or chicken for a leaner option.
