Ingredients
2poundsBaby Potatoes, halved
1/4cupOlive Oil
1/2cupGrated Parmesan Cheese
4clovesGarlic, minced
1teaspoonSalt
1/2teaspoonBlack Pepper
2tablespoonsChopped Fresh Parsley (for garnish)
Instructions
Preheat your oven to 400°F (200°C). Make sure the oven rack is in the center position for even browning.
Toss the halved potatoes with olive oil, garlic, salt, and pepper in a large bowl. Use your hands or a spoon to coat each piece evenly so the seasoning is distributed.
Sprinkle grated Parmesan over the potatoes and toss again to evenly coat. Press the Parmesan into the potatoes lightly so it adheres — this helps form the golden crust.
Spread the potatoes out on a baking sheet in a single layer. Leave space between pieces so air can circulate and produce crisp edges; overcrowding will create steam instead of crisping.
Roast in the preheated oven for 25-30 minutes, or until golden and crispy. Flip the potatoes once halfway through roasting for even color. Start checking at 20 minutes if your oven runs hot.
Remove from the oven, sprinkle with fresh parsley, and serve immediately to enjoy the best texture.
Notes
For best texture, reheat in a 400°F (200°C) oven or toaster oven for 8–12 minutes until warmed through and the edges crisp back up.
