  • 2 pounds Baby Potatoes, halved
  • 1/4 cup Olive Oil
  • 1/2 cup Grated Parmesan Cheese
  • 4 cloves Garlic, minced
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 2 tablespoons Chopped Fresh Parsley (for garnish)

Instructions

  • Preheat your oven to 400°F (200°C). Make sure the oven rack is in the center position for even browning.
  • Toss the halved potatoes with olive oil, garlic, salt, and pepper in a large bowl. Use your hands or a spoon to coat each piece evenly so the seasoning is distributed.
  • Sprinkle grated Parmesan over the potatoes and toss again to evenly coat. Press the Parmesan into the potatoes lightly so it adheres — this helps form the golden crust.
  • Spread the potatoes out on a baking sheet in a single layer. Leave space between pieces so air can circulate and produce crisp edges; overcrowding will create steam instead of crisping.
  • Roast in the preheated oven for 25-30 minutes, or until golden and crispy. Flip the potatoes once halfway through roasting for even color. Start checking at 20 minutes if your oven runs hot.
  • Remove from the oven, sprinkle with fresh parsley, and serve immediately to enjoy the best texture.

Notes

For best texture, reheat in a 400°F (200°C) oven or toaster oven for 8–12 minutes until warmed through and the edges crisp back up.
