Ingredients

Pasta

  • 12 ounces pasta (like orecchiette or bowtie)

Cooking Oil

  • 1 tablespoon olive oil

Sausage

  • 1 pound spicy Italian sausage, casing removed

Vegetables

  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups baby spinach

Cream and Broth

  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 cup grated Parmesan cheese

Seasoning

  • Salt and pepper to taste

Garnish

  • Fresh parsley or basil, for garnish

Instructions

  • Cook the pasta according to package instructions; then drain and set it aside.
  • In a large skillet, heat the olive oil over medium heat.
  • Add the sausage and break it into pieces, cooking until it’s browned and cooked through.
  • Next, add the diced onion and minced garlic, cooking until the onion is soft.
  • Stir in the sun-dried tomatoes and baby spinach, cooking until the spinach wilts.
  • Pour in the heavy cream and chicken broth, and sprinkle in the Italian seasoning. Bring everything to a simmer and let it cook for a few minutes until the sauce begins to thicken.
  • Add the cooked pasta to the skillet along with the grated Parmesan cheese. Toss everything together until the pasta is evenly coated with the sauce.
  • Season with salt and pepper to taste. Serve garnished with fresh parsley or basil.

Notes

Serve this delicious pasta warm right from the skillet. It pairs well with a simple side salad or garlic bread for a complete meal. Don’t forget to sprinkle a little extra Parmesan on top for that cheesy goodness!
