  • 2 pieces Boneless, skinless chicken breasts, cooked and diced
  • 8 oz Orzo pasta
  • 2 stalks Celery, finely diced
  • 1 cup Heavy cream
  • 1 cup Chicken broth
  • 1 cup Mixed vegetables (peas, carrots)
  • 1 teaspoon Garlic powder
  • to taste Salt and pepper
  • 1 tablespoon Olive oil

Instructions

  • In a large pot, heat olive oil over medium heat.
  • Add the diced chicken and sauté for 2-3 minutes, until slightly golden and warmed through.
  • Add the celery and mixed vegetables, cooking until soft, about 3-4 minutes.
  • Stir in the orzo and cook for 2 minutes so it gets lightly toasted and coated.
  • Pour in the chicken broth and bring to a simmer, stirring occasionally to prevent sticking.
  • Once the orzo is cooked (about 8-10 minutes depending on brand), reduce heat and stir in the heavy cream, garlic powder, salt, and pepper.
  • Allow to simmer for another 2-3 minutes until the sauce is creamy and the flavors meld. Taste and adjust seasoning.
  • Serve warm and enjoy!

Notes

Use day-old or leftover cooked chicken to save time. For a lighter version, substitute half-and-half for heavy cream.
