Instructions
In a large pot, heat olive oil over medium heat.
Add the diced chicken and sauté for 2-3 minutes, until slightly golden and warmed through.
Add the celery and mixed vegetables, cooking until soft, about 3-4 minutes.
Stir in the orzo and cook for 2 minutes so it gets lightly toasted and coated.
Pour in the chicken broth and bring to a simmer, stirring occasionally to prevent sticking.
Once the orzo is cooked (about 8-10 minutes depending on brand), reduce heat and stir in the heavy cream, garlic powder, salt, and pepper.
Allow to simmer for another 2-3 minutes until the sauce is creamy and the flavors meld. Taste and adjust seasoning.
