  • 1 lb Cooked chicken, shredded (rotisserie chicken works great)
  • 32 oz Frozen tater tots
  • 1 can Cream of chicken soup (10.5 oz)
  • 1 cup Sour cream
  • 1 packet Ranch seasoning mix
  • 2 cups Shredded cheddar cheese, divided (1 cup for mixing, 1 cup for topping)
  • 1/2 cup Cooked bacon, crumbled
  • 1/2 cup Green onions, sliced (optional, for garnish)
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine the cream of chicken soup, sour cream, ranch seasoning mix, and 1 cup of shredded cheddar cheese. Stir until smooth.
  • Add the crumbled bacon and shredded chicken to the bowl. Mix well until everything is fully combined. Season with salt and pepper to taste.
  • Lightly grease a 9x13-inch baking dish with cooking spray or a little oil.
  • Spread the chicken mixture evenly into the prepared baking dish, smoothing the top with a spatula.
  • Arrange the frozen tater tots in a single layer over the chicken mixture, covering it completely.
  • Place the casserole in the preheated oven and bake for 25 to 30 minutes, or until the tater tots are golden and crispy and the filling is heated through.
  • Remove the casserole from the oven and sprinkle the remaining 1 cup of shredded cheddar cheese over the tater tots.
  • Return the casserole to the oven for another 5 to 7 minutes, or until the cheese is melted and bubbly.
  • Once out of the oven, sprinkle sliced green onions on top, if using. Let the casserole sit for 5 minutes before serving. Serve hot and enjoy!

Notes

Use rotisserie chicken to save time and add extra flavor. Leftover roasted chicken also works well. For extra crispiness, bake the casserole uncovered on the top rack.
