Ingredients
2poundsChicken breast, cooked and shreddedPoached, roasted, or rotisserie chicken works well.
8ouncesCream cheeseSoftened to room temperature for easy mixing.
8slicesBaconCooked until crisp and crumbled.
1cupCheddar cheese, shreddedDivided into half for mixing and half for topping.
1/4cupGreen onions, choppedWhite and light green parts preferred.
Instructions
Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish lightly with cooking spray or a little butter.
Spread the shredded chicken evenly across the bottom of the prepared baking dish to form a uniform layer.
In a medium bowl, combine the softened cream cheese, half of the cheddar cheese (about 1/2 cup), and the chopped green onions. Stir until smooth and spread this mixture evenly over the chicken.
Sprinkle the crumbled bacon evenly over the cream cheese layer, then cover with the remaining cheddar cheese for a cheesy top.
Place the baking dish in the preheated oven and bake for 25 minutes, or until the casserole is bubbly and the top is golden and just beginning to brown.
Remove from the oven and let the casserole rest for 5 minutes before serving to allow the flavors to meld and the filling to set slightly.
