  • 1 can whole kernel corn, drained
  • 2 pieces eggs
  • to taste salt and pepper
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • 1/2 cup shredded cheese (cheddar or preferred type)
  • 1 pat butter
  • 2 tablespoons oil
  • 1/4 cup chopped parsley

Instructions

  • In a large bowl, beat eggs with salt and pepper.
  • Whisk in flour and baking powder until smooth.
  • Stir in drained corn, shredded cheese, and chopped parsley.
  • Heat butter and oil in a frying pan over medium heat until bubbly.
  • Drop spoonfuls of the batter into the pan and cook until golden brown on one side.
  • Flip and cook the other side until crisp and cooked through.
  • Remove fritters and drain on paper towels. Serve hot with your favorite sauce.

Notes

Try adding green onions, jalapeños, or crumbled bacon for extra flavor. Serve with ranch, sour cream, or hot sauce. To reheat, crisp in a skillet or toaster oven.
