  • 2/3 cup cassava flour
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 3/4 cup coconut butter (softened)
  • 3 tbsp honey
  • 3 tbsp coconut sugar
  • 1 egg (room temperature)
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips

Instructions

  • Preheat oven to 350°F. Line a baking sheet with parchment paper.
  • In a small bowl, mix cassava flour, baking soda, and sea salt.
  • In a separate bowl, stir together softened coconut butter, honey, and coconut sugar until smooth.
  • Mix in egg and vanilla extract until combined.
  • Add dry ingredients to wet and stir to form a dough. Fold in chocolate chips.
  • Roll dough into balls and place on prepared sheet. Flatten slightly with your hand.
  • Bake for 12 minutes or until golden around the edges. Cool and enjoy!

Notes

Make sure your coconut butter is soft before mixing. Flatten cookies before baking as they won’t spread. Store in an airtight container for up to 4 days.
