4cupscooked, shredded chicken
6cupsdried bread cubes
1largeonion, diced
2stalkscelery, diced
2clovesgarlic, minced
1/2cupbuttermelted
2.5cupschicken broth
1/4cupfresh parsley, chopped
1tablespoonfresh sage, chopped
1teaspoondried thyme
Salt and pepperto taste
2largeeggs, beaten
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, melt the butter.
Add the diced onion, celery, and minced garlic. Sauté them until they are soft.
In a big bowl, combine the bread cubes with the sautéed vegetables, shredded chicken, parsley, sage, thyme, salt, and pepper.
Gradually pour the chicken broth over the mixture while stirring until everything is well moistened.
Mix in the beaten eggs.
Transfer the mixture to a greased 9x13 inch baking dish and cover it with foil.
Bake for 35 minutes.
Remove the foil and bake for an additional 10 minutes or until the top is golden brown.
Notes
Serve this casserole hot from the oven. It goes well with a side salad or steamed veggies. You can also add some cranberry sauce for a touch of sweetness!
