Ingredients

  • 4 cups cooked, shredded chicken
  • 6 cups dried bread cubes
  • 1 large onion, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 1/2 cup butter melted
  • 2.5 cups chicken broth
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon fresh sage, chopped
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 large eggs, beaten

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, melt the butter.
  • Add the diced onion, celery, and minced garlic. Sauté them until they are soft.
  • In a big bowl, combine the bread cubes with the sautéed vegetables, shredded chicken, parsley, sage, thyme, salt, and pepper.
  • Gradually pour the chicken broth over the mixture while stirring until everything is well moistened.
  • Mix in the beaten eggs.
  • Transfer the mixture to a greased 9x13 inch baking dish and cover it with foil.
  • Bake for 35 minutes.
  • Remove the foil and bake for an additional 10 minutes or until the top is golden brown.

Notes

Serve this casserole hot from the oven. It goes well with a side salad or steamed veggies. You can also add some cranberry sauce for a touch of sweetness!
