  • 2 cups Corn (fresh, canned, or frozen)
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Shredded Monterey Jack Cheese
  • 1/2 cup Sour Cream
  • 1/2 cup Diced Bell Peppers
  • 1 Jalapeño, finely chopped
  • 1/4 cup Butter, melted
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Instructions

  • Preheat oven to 375°F (190°C) and grease a baking dish.
  • In a large bowl, mix corn, cheddar cheese, Monterey Jack cheese, sour cream, diced bell peppers, jalapeño, melted butter, garlic powder, salt, and black pepper.
  • Pour the mixture into the greased baking dish and spread evenly.
  • Bake for 35 minutes or until golden and bubbly.
  • Let cool slightly before serving. Enjoy warm!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave before serving. For a heartier dish, add cooked chicken or ground beef.
