  • 1 box yellow cake mix
  • 20 oz crushed pineapple with juice 1 can
  • 1 cup sugar
  • 3.4 oz instant vanilla pudding mix 1 package
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • shredded coconut for topping

Instructions

  • Prepare the cake mix according to package directions and bake it in a 9x13 inch pan.
  • In a saucepan, combine the crushed pineapple and sugar. Bring it to a boil and let it simmer until slightly thickened.
  • Pour the pineapple mixture over the hot cake.
  • Once the cake has cooled, whip the heavy cream, powdered sugar, and vanilla extract together until you see stiff peaks.
  • Spread the whipped cream over the cooled pineapple-topped cake.
  • Finish by sprinkling shredded coconut over the top.
  • Chill the cake in the refrigerator for at least 2 hours before serving.
