Instructions
In a large bowl, combine the crushed Butterfinger candy bars, creamy peanut butter, rice krispies, powdered sugar, and vanilla extract. Mix everything until it is cohesive and sticky.
Roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper. Freeze for about 30 minutes to firm them up.
While the balls are freezing, melt the chocolate chips and coconut oil together in a double boiler. Stir until the mixture is smooth.
Once the balls are chilled, dip each one into the melted chocolate. Make sure each ball is completely coated. Place the coated balls back on the parchment paper.
While the chocolate is still wet, sprinkle crushed peanuts on top for extra crunch. Let the balls set in the refrigerator until the chocolate hardens, about 15-20 minutes.
Serve these delicious Butterfinger Balls as a treat at parties or enjoy them as a sweet dessert. They keep well in an airtight container in the refrigerator for up to a week!
Notes
Make sure to crush the Butterfinger bars well for the best texture. Use a small cookie scoop to help roll the mixture into even balls.
