Ingredients

For the Muffins

  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 3 bananas, mashed
  • 0.75 cup white sugar
  • 1 egg, lightly beaten
  • 0.33 cup butter, melted

For the Streusel Topping

  • 0.33 cup packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon butter

Instructions

  • Preheat your oven to 375°F (190°C). Grease or line 10 muffin cups with paper liners.
  • In a large mixing bowl, whisk together 1 ½ cups flour, baking powder, baking soda, and salt.
  • In a separate bowl, blend the mashed bananas with white sugar, the lightly beaten egg, and melted butter.
  • Gently fold the banana mixture into the flour mixture until just moistened.
  • In a small bowl, combine the brown sugar, 2 tablespoons flour, and cinnamon. Cut in 1 tablespoon butter until crumbly.
  • Distribute the batter evenly among the prepared muffin cups. Sprinkle the streusel topping evenly over each. Bake for 18-20 minutes, or until a toothpick comes out clean.
