  • 1 onion finely chopped onion
  • 1.5 cups grated Swiss cheese
  • 6 slices cooked bacon, diced
  • 3 tablespoons all-purpose flour
  • to taste Salt
  • to taste Pepper
  • 2 lb. very thinly sliced potatoes
  • 2 cups 15% cream, warmed

Instructions

  • Preheat oven to 350°F (175°C) and butter an 8-inch square baking dish.
  • In a bowl, mix onion, Swiss cheese, cooked bacon, flour, salt, and pepper.
  • Layer 1/3 of the sliced potatoes in the dish.
  • Top with 1/3 of the cheese and bacon mixture. Repeat layers twice more.
  • Pour warm cream evenly over the top layer.
  • Cover with foil and bake for 45 minutes.
  • Uncover and bake for an additional 25–30 minutes, until top is golden and potatoes are tender.
  • Let rest 10 minutes before serving.

Notes

Use a mandoline for even potato slices. Swap Swiss for Gruyère or cheddar if preferred. Add thyme or rosemary for an herby touch.
