Blintz Brownie Bites

These Blintz Brownie Bites are a fun fusion of creamy blintz filling and rich, fudgy brownies, making for a decadent bite-sized dessert!

Ingredients:

  • ½ cup small curd cottage cheese, strained
  • 4 oz cream cheese, softened
  • 2 tbsp honey
  • ½ tsp lemon zest
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 box brownie mix (18 oz), plus package ingredients

Directions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  2. Make the Blintz Filling:
    • In a small bowl, combine the strained cottage cheese, cream cheese, honey, lemon zest, vanilla extract, and a pinch of salt. Mix until smooth. Set aside.
  3. Prepare the Brownies:
    • Follow the directions on the brownie mix box to prepare the brownie batter.
  4. Prepare the Muffin Pan:
    • Line a 24-cup mini muffin pan with paper liners and grease lightly to prevent sticking.
  5. Assemble the Bites:
    • Spoon brownie batter into each muffin cup, filling each about ¾ of the way.
    • Add a small dollop of the blintz mixture on top of each brownie.
  6. Bake:
    • Bake for about 25 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool & Serve:
    • Let the Blintz Brownie Bites cool slightly before serving. Enjoy warm or at room temperature.
