  • 1 pound Italian sausage, casing removed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 3 large potatoes, sliced into 1/4-inch slices
  • 1 cup heavy cream
  • 1 bunch kale, stems removed and leaves torn

  • to taste pepper
  • to taste crushed red pepper flakes (optional)

Instructions

  • In a large pot, cook the Italian sausage over medium heat. Break it up as it cooks until browned and crumbly.
  • Add the diced onion and minced garlic to the sausage. Cook until the onion is soft.
  • Pour in the chicken broth and bring everything to a boil.
  • Add the sliced potatoes and simmer until they are tender, about 10-15 minutes.
  • Reduce the heat and stir in the heavy cream and kale. Cook until the kale is wilted and the soup is heated through.
  • Season with salt, pepper, and crushed red pepper flakes if you like a little kick.
  • Serve hot, perfect for a cold day!

Notes

Use fresh ingredients for the best flavor. Adjust the spice level by adding more or less crushed red pepper flakes. For a creamier soup, add more heavy cream. You can also use other greens like spinach or Swiss chard, and add other vegetables like carrots or celery for extra nutrition!
