Ingredients

Zucchini

  • 2 cups shredded zucchini

Cheese

  • 1/2 cup shredded cheddar cheese

Baking Mix

  • 1/3 cup biscuit/baking mix

Onion

  • 2 tablespoons grated onion

Seasonings

  • 1/2 teaspoon salt
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon pepper

Eggs

  • 2 large eggs, room temperature, lightly beaten

Butter

  • 2 tablespoons butter

Instructions

  • In a mixing bowl, combine zucchini, cheddar cheese, baking mix, grated onion, salt, basil, and pepper.
  • Stir in the eggs and mix thoroughly until well blended.
  • Using about 1/4 cup of mixture per patty, shape into 6 even patties.
  • Heat butter in a skillet over medium-high heat.
  • Cook patties in the skillet for 4–5 minutes per side, or until golden brown and cooked through.
  • Remove from skillet and place on a paper towel-lined plate to drain excess butter. Serve warm.

Notes

Drain zucchini well to prevent sogginess. You can bake instead of fry at 400°F for 20–25 minutes. Add extra veggies or swap cheeses to mix things up!
