Zesty Lemonade Puppy Chow

Ingredients
Cereal
- 9 cups Rice Chex cereal
Chocolate Mixture
- 1.5 cups white chocolate chips
- 2 tablespoons unsalted butter
- 2 tablespoons fresh lemon zest finely grated
- 3 tablespoons lemon juice
Coating
- 1.5 cups powdered sugar
- 0.5 cup lemon-flavored instant pudding mix
Instructions
- Step 1: Place the 9 cups of Rice Chex cereal in a large mixing bowl. Set aside.
- Step 2: In a microwave-safe bowl, combine 1.5 cups white chocolate chips and 2 tablespoons unsalted butter. Microwave in 30-second bursts, stirring well each time, until the mixture is completely melted and smooth.
- Step 3: Stir in the 2 tablespoons of fresh lemon zest and 3 tablespoons of lemon juice while the chocolate mixture is still warm. Mix until fully combined.
- Step 4: Pour the lemony chocolate mixture over the Rice Chex. Gently fold with a spatula or spoon until all the cereal pieces are evenly coated.
- Step 5: In a large zip-top plastic bag, add 1.5 cups powdered sugar and 0.5 cup lemon-flavored instant pudding mix. Scoop the coated cereal into the bag, seal tightly, and shake vigorously until each piece is well coated.
- Step 6: Spread the Puppy Chow onto a large baking sheet lined with parchment paper. Let it cool for about 10 minutes, then break apart any large clusters.
- Step 7: Pour into a bowl and serve, or store in an airtight container for later snacking.
Notes
Use freshly grated lemon zest for the best flavor. Let the Puppy Chow cool completely before storing to avoid sogginess.
