Instructions
Step 1: Place the 9 cups of Rice Chex cereal in a large mixing bowl. Set aside.
Step 2: In a microwave-safe bowl, combine 1.5 cups white chocolate chips and 2 tablespoons unsalted butter. Microwave in 30-second bursts, stirring well each time, until the mixture is completely melted and smooth.
Step 3: Stir in the 2 tablespoons of fresh lemon zest and 3 tablespoons of lemon juice while the chocolate mixture is still warm. Mix until fully combined.
Step 4: Pour the lemony chocolate mixture over the Rice Chex. Gently fold with a spatula or spoon until all the cereal pieces are evenly coated.
