Instructions
Preheat your oven to 325°F (163°C).
In a bowl, mix together graham cracker crumbs, melted butter, and sugar. Press this mixture into the bottom of a 9-inch springform pan to create a base.
Use a double boiler to melt the white chocolate chips with heavy cream. Stir until smooth, then set aside to cool.
In a large bowl, beat the softened cream cheese and sugar until smooth.
Add eggs one at a time, mixing just until combined.
Stir in the vanilla extract and melted white chocolate mixture.
Gently fold in the chopped strawberries.
