White Chocolate Strawberry Cheesecake

Ingredients

Crust Ingredients

  • 1.5 cups Graham cracker crumbs
  • 0.25 cup Unsalted butter, melted
  • 0.25 cup Sugar

Filling Ingredients

  • 2 cups White chocolate chips
  • 0.5 cup Heavy cream
  • 3 packages Cream cheese, softened 8 oz each
  • 0.5 cup Granulated sugar
  • 3 large Eggs
  • 1 teaspoon Vanilla extract
  • 1 cup Fresh strawberries, chopped

Instructions

  • Preheat your oven to 325°F (163°C).
  • In a bowl, mix together graham cracker crumbs, melted butter, and sugar. Press this mixture into the bottom of a 9-inch springform pan to create a base.
  • Use a double boiler to melt the white chocolate chips with heavy cream. Stir until smooth, then set aside to cool.
  • In a large bowl, beat the softened cream cheese and sugar until smooth.
  • Add eggs one at a time, mixing just until combined.
  • Stir in the vanilla extract and melted white chocolate mixture.
  • Gently fold in the chopped strawberries.
  • Pour the mixture over the crust.
  • Bake for about 50-55 minutes until the center is set but slightly wobbly.
  • Let it cool completely on a wire rack, then refrigerate for at least 4 hours before serving.

Notes

Serve with whipped cream and fresh strawberries. Store leftovers in the fridge for up to 5 days.
