  • 2 pieces boneless, skinless chicken breasts, sliced
  • 2 cups pasta (penne or fettuccine)
  • 1 cup heavy cream
  • 1.5 cups shredded white cheddar cheese
  • 0.25 cup grated Parmesan cheese
  • 1 piece onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil

Instructions

  • Cook the pasta according to the package instructions. Drain and set aside.
  • In a skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until soft.
  • Add sliced chicken to the skillet. Season with salt and pepper. Cook until browned and fully cooked.
  • Reduce heat and pour in the heavy cream. Let it simmer for a few minutes.
  • Stir in white cheddar and Parmesan cheese until melted and the sauce is smooth.
  • Add the cooked pasta to the skillet and toss until well coated in the sauce.
  • Cook for an additional 2-3 minutes, then garnish with chopped parsley before serving.

Notes

For extra flavor, add red pepper flakes or fresh herbs like basil or thyme. You can also mix in vegetables like spinach, broccoli, or peas for added nutrition.
