  • 2 lbs Fresh Strawberries Washed and hulled
  • 8 oz Feta Cheese Crumbled
  • 1/4 cup Cream Cheese
  • 1/4 cup Greek Yogurt
  • 2 tablespoons Honey Plus more for drizzling
  • 1 tablespoon Olive Oil
  • to taste Salt
  • to taste Pepper

Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash the strawberries, remove the stems, and cut them in half. Place them in a baking dish.
  • Drizzle the strawberries with olive oil and sprinkle with a pinch of salt. Toss gently and roast in the oven for about 20 minutes until soft and caramelized.
  • In a mixing bowl, combine the feta cheese, cream cheese, Greek yogurt, and honey. Use a hand mixer or food processor to whip until smooth and creamy.
  • Taste the whipped feta and add salt and pepper as desired.
  • Once the strawberries are done roasting, allow them to cool slightly, then serve them atop a generous dollop of whipped feta. Drizzle with more honey if desired.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Enjoy cold or at room temperature.
