Instructions
Preheat your oven to 400°F (200°C).
Wash the strawberries, remove the stems, and cut them in half. Place them in a baking dish.
Drizzle the strawberries with olive oil and sprinkle with a pinch of salt. Toss gently and roast in the oven for about 20 minutes until soft and caramelized.
In a mixing bowl, combine the feta cheese, cream cheese, Greek yogurt, and honey. Use a hand mixer or food processor to whip until smooth and creamy.
Taste the whipped feta and add salt and pepper as desired.
Once the strawberries are done roasting, allow them to cool slightly, then serve them atop a generous dollop of whipped feta. Drizzle with more honey if desired.

Store leftovers in an airtight container in the fridge for 3-4 days. Enjoy cold or at room temperature.
