  • 1 pound Chicken breast, cut into 1-inch cubes
  • 1 cup Pineapple chunks
  • 1 each Red bell pepper, cut into 1-inch pieces
  • 1 each Green bell pepper, cut into 1-inch pieces
  • 1/4 cup Soy sauce
  • 2 tablespoons Honey
  • 1 tablespoon Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Ginger, grated
  • Salt and pepper to taste

Instructions

  • In a large bowl, whisk together soy sauce, honey, olive oil, garlic powder, and ginger. Add chicken pieces and toss to coat. Marinate for at least 30 minutes, or up to overnight in the refrigerator.
  • Preheat the grill to medium-high heat. Thread the marinated chicken, pineapple chunks, and bell pepper pieces alternately onto skewers.
  • Place the kabobs on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is thoroughly cooked and vegetables are slightly charred.
  • Remove from grill and season with salt and pepper to taste. Serve immediately.

Notes

Store leftover Chicken Pineapple Kabobs in an airtight container in the refrigerator for up to 3 days. Reheat on the grill or in the microwave before serving.
