  • 1/2 cup melted butter
  • 1 cup self-rising flour
  • 1 1/2 cups sugar divided
  • 1 cup milk
  • 1/2 tsp vanilla extract
  • 3 cups blackberries (fresh or frozen)
  • 1/4 cup water

Instructions

  • In a medium saucepan, combine blackberries, 1 cup of sugar, and 1/4 cup of water. Bring to a boil, then reduce heat and simmer for 5–10 minutes until thickened. Remove from heat.
  • In a mixing bowl, combine self-rising flour, the remaining 1/2 cup sugar, vanilla extract, and milk. Whisk until smooth.
  • Preheat oven to 350°F (175°C). Place butter in a 9x13 baking dish and let it melt in the oven for a few minutes.
  • Remove dish from oven, pour batter over the melted butter—do not stir.
  • Spoon blackberry mixture over the batter—again, do not stir.
  • Bake for 30–40 minutes, or until the top is golden brown and set.
  • Let cool slightly and serve warm with ice cream or whipped cream if desired.

Notes

Mix in other berries like raspberries or blueberries for variety. If using frozen berries, there's no need to thaw first. Store leftovers in the fridge for 3–4 days or freeze for up to 2 months. Reheat in microwave or oven before serving.
