Instructions
Preheat your oven to 350°F (175°C).
Grease and line a loaf pan with parchment paper.
In a large bowl, whisk together the flour, sugar, baking powder, and cinnamon.
In another bowl, beat the eggs, then add the vegetable oil and milk. Mix well.
Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix.
Fold in the diced apples evenly through the batter.
Pour the batter into the prepared loaf pan and smooth the top.
In a small bowl, mix the sugar and cinnamon for the topping. Sprinkle evenly over the batter.
Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Enjoy!
Notes
Store in an airtight container at room temperature for up to 3 days or refrigerate for a week. You can also freeze slices for up to three months.
