Ingredients

Meat

  • 1.5 pounds ground beef

Vegetables

  • 1/3 large onion chopped onion
  • 1 small can green chilies

Sauces

  • 1 can enchilada sauce
  • 2 ounces cream cheese

Chips

  • 1 bag Fritos corn chips
  • 1 bag shredded cheese (cheddar or Mexican blend)

Toppings

  • 3/4 cup lettuce, shredded
  • 1/2 cup fresh diced tomato
  • 16 ounces salsa
  • 8 ounces sour cream

Instructions

  • Preheat oven to 350°F (175°C).
  • In a skillet over medium heat, brown the ground beef with onion until cooked through. Drain excess fat.
  • Stir in green chilies, enchilada sauce, and cream cheese. Cook until cream cheese is melted and mixture is well combined.
  • In a 9×13-inch baking dish, layer Fritos, then the beef mixture, followed by shredded cheese.
  • Repeat layers if needed.
  • Bake uncovered for 15–20 minutes, until cheese is melted and bubbly.
  • Top each serving with lettuce, tomato, salsa, and sour cream as desired.

Notes

Use ground turkey or black beans for a lighter or vegetarian version. Add jalapeños, black olives, or bell peppers to customize. Best served fresh, but leftovers can be reheated easily.
